Butter Biscuit / Benne Biscuit

Ingredients
APF-11/4cup
Unsalted Butter(@room temp.)-1stick (1/2cup)
Baking powder-1/2teaspoon
Curd-1tablespoon
Sugar-2 tablespoons
Salt-1/2teaspoon

Method
Sieve the flour with baking powder twice.
Cream the butter for 2 minutes,then add the curd,sugar and salt..mix well till it becomes light n fluffy.
Now add the flour slowly and mix gently with fingers, then knead it gently to get the roti dough consistency.
Preheat the oven to 350F.
Now make small pieces of the dough... shape into desired form without cracks and arrange them on a lined baking tray.
Bake the cookies for 17 to 20 minutes.
Take them out and let it cool for a couple of minutes. Then take them away from the baking tray and let it cool completely.
Store it in airtight containers and enjoy!

These cookies are really soft..they mildly sweet n salty.. just melt in the mouth. If you want them sweeter,feel free to increase the sugar and decrease the salt.
These cookies won't change much in color..so be careful after 17minutes and take them out. The perfectly baked cookies will be having a nice brown color on the bottom and puffed up a bit in the center. :)

Savoury Buttermilk Cookies

I bought Greek buttermilk once and tried these cookies. Actually it was the same dough for a deep fried snack,instead of frying it, I made the dough little stiff and baked them as cookies. It was a great success! :)

Ingredients
All purpose flour -11/4cups
Butter milk - little less than 1/2cup
Baking powder-1/2teaspoon
Sugar-1tablespoon
Onion(small)-1
Green chilly-2
Olive oil-2tablespoons
Chopped coconut pieces-11/2 tablespoons
Few curry leaves, chopped finely.
Salt


Method
Sieve the the flour and baking powder together.
Chop the onions and green chilly into fine pieces.
Combine all the ingredients except butter milk in a bowl.
Mix well and add buttermilk little at a time and make a pliable dough.
Preheat the oven to 360F.
Divide the dough into small uniform sized pieces, arrange them on a lined baking tray.
Bake the cookies for 20 minutes, take them out, turn it over, then bake again for 5-10 minutes.
Yummy cookies are ready to enjoy with a cup of tea.

Savoury Cookies

I saw the "Masala cookies" recipe in Suhaina's blog and tried them with little changes,according to our taste.Cookies turned out to be awesome.Thanks Suhaina for this wonderful recipe!

The taste was somewhat nearer to Bhakarwadi,which is my hubby's favourite snack. :)

Ingredients
All Purpose Flour- 1 ½ cup

Egg(in room temperature)- 1

Green Chilly-2

Curry Leaves- 1 spring

Chilly powder- 3/4tea spoon

Garam Masala- ¾ teaspoon

Ginger- ½ teaspoons

Sugar- 11/2 t
ablespoons
Butter-2 tablespoons

Sunflower oil-2tablespoons
Salt- ½ teaspoon

Sesame seeds- 11/2 table spoons

Cashew nuts- 2tablespoons



Method
Chop the Green chillies and curry leaves finely. Grate the ginger,brake the cashews into small pieces. Combine all the dry ingredients in a bowl and mix them well.

Make a well in the centre and add the egg, mix it well with the flour.
Melt the butter in the microwave and add it with the cookie mix. stir it well and make it into crumbles.
Add the oil little by little until you can make a soft dough.(since we have added butter, you can get the texture with 2tbs of oil itself)

Make small balls and arrange them on a cookie sheet.

Preheat the oven to 355 degree F and bake the cookies for 20-25minutes.

Spicy savoury cookies are ready! Store them in an airtight container and enjoy!

Corn Flake Jumbles with Craisins

I got a few packs of craisins(dried cranberries) with the kellogs corn flakes cereal pack.There was a tempting recipe on the cereal pack..Thought of making them for a long time, and at last prepared the cookies one day. I just followed the ingredients and method from the pack. Didn't have walnut while baking the cookies,so just skipped the nuts. Cookies turned out very yummy!!

Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/3 cup butter or margarine, softened
  • 1 egg
  • 5 teaspoons milk
  • 1/2 teaspoon vanilla
  • 2/3 cup Ocean Spray Craisins
  • 2 2/3 cups Kellogg's Corn Flakes cereal
Directions
In medium bowl stir together flour, baking powder, soda and salt. Set aside.
In large mixer bowl beat sugar and butter on medium speed of electric mixer until combined. Add egg, milk and vanilla.

Beat until fluffy. Add flour mixture. Mix until just combined. Stir in the craisins.
Place the crumbled Kelloggs corn flakes cereal in shallow dish. Drop rounded teaspoonfuls of dough in cereal. Roll until coated.
Place on cookie sheet and flatten them slightly.
Bake at 375°F about 12 minutes or until golden brown.
Cool completely on wire racks.
Store in airtight container & Enjoy!

Coconut Biscuit


Ingredients
Sweetened coconut flakes-1cup
All purpose flour-11/4cup
Baking powder-3/4spoon
Unsalted butter(in room temperature)-1stick(115grams)
Sugar-3/4cup
Method
Preheat the oven at 250F and bake the coconut flakes for 15 minutes.(till you get a nice golden colour)
Mix the baking powder with the flour and sieve the mixture twice.
Cream the butter and sugar till they become light and fluffy.
Slowly add the flour and mix it with your finger.
Then add the roasted coconut flakes and mix well.
Make the desired shapes and arrange them in a baking tray. keep the tray in freezer for 15minutes.
Preheat the oven to 350F and bake the biscuits for 15minutes. yummy coconut biscuits are ready!
Let it cool completely..store it in an airtight container.

Note
You can add chopped nuts while adding the coconut flakes..it enhances the taste of the biscuit.
