Muttai puli kuzhambu/ Poached egg gravy with tamarind

Ingredients
Egg- 2
Onion-1
Green chilly-1
Chilly powder-1teaspoon
Coriander powder-1teaspoon
Turmeric powder-1/4teaspoon
Coconut milk powder -2teaspoons
Tamarind juice-1/4cup
Mustard seeds-1/2teaspoon
Cumin seed-1/2teaspoon
Few curry leaves
Salt
Sugar-1/2teaspoon
Oil

Method
Heat oil in a pan. Add mustard seeds, let them pop up, then add cumin seeds and curry leaves, let them sizzle. 
Add the chopped onion, green chilly and sauté them.
Once he onion turns pink, add the chilly powder- coriander powder and turmeric powder.
Add the tamarind juice and required amount of water, salt and let it boil nicely.
After the raw smell has gone, reduce the heat  and add the coconut milk powder and sugar..mix it well.
Now break the eggs and add them with the gravy.
Mix it gently and cook for a few minutes or until the eggs are done.
Enjoy the quick and delicious kuzhambu with piping hot rice.

Vegetable Omelet

Ingredients
Eggs-3
Carrot(small)-1
Beans-5
Chopped capsicum-2tablespoons
Chopped tomato-2tablespoons
Chopped onion-3tablespoons
Chopped green chilly-1teaspoon(adjust)
Chopped cilantro-1tablespoon
Salt
Oil

Method
Chop the carrots and beans into very thin slices.
Break the eggs into a bowl, beat them well and keep it aside.
Heat oil in a pan, add all the chopped veggies, except cilantro with enough slat.
Sauté until they are half cooked.
Now pour the egg into the pan, spread the veggies uniformly.
Cook on medium heat for a few minutes or one side of the omelet is cooked.
Meanwhile, heat a griddle on medium heat.
Loosen the edges of the omelet and carefully drop it on the griddle.
Cook for a few minutes and check the doneness of the omelet.
Obviously, this is a BIG omelet, so slice it into desired pieces(preferably 3)..
..and enjoy with your choice of fruit.

Poached Egg Kurma / Muttai kuruma

Ingredients
Eggs-2
Onion(chopped)-3tablespoons
Few curry leaves
Tomato-1
Turmeric powder-1/8teaspoon
Coriander powder-11/4teaspoon
Chilly powder-1teaspoon
Oil
Salt
Cilantro to garnish
To grind coarsely
Chopped onion-2tablespoon
Green chilly-1
Red chilly-1
Cinnamon stick-2"piece
Clove-1
Elaichi-1
Fennel seeds-1/2teaspoon
Coriander seeds-1/2teaspoon
Pepper corns-4
To grind into a fine paste
Grated coconut-2tablespoons
Cashew-4

Method
Grind the items under "to grind into a coarse paste" and keep it ready.
Grind the coconut and cashews with little water into a fine paste and keep it aside.
Heat oil in a pan, add the chopped onion, curry leaves and fry for a few minutes. Then add the coarsely ground masala, sauté till the raw smell of the masala is gone.
Now add the turmeric powder, chopped tomato, coriander and chilly powders, and continue cooking.
Once the tomatoes become soft n mushy, oil started oozing out from the content, add in the coconut cashew paste, adjust the water to the desired consistency.
Let the kurma boil nicely for 6-7 minutes on medium heat.
Reduce the heat to low, break the eggs and add it to the kurma one by one.
Leave the kurma undisturbed for 2-3 minutes and then mix it gently.
Switch off the flame after a couple of minutes and garnish with cilantro.
Delicious aromatic egg kurma is ready to serve. It goes well with Chapathi, dosa, idli and appam.

Chapati-Omelet Roll

If you are looking for a quick and filling healthy meal, here you go!
Ingredients
Large egg-1
Milk-2teaspoons
Chopped onion-2tablespoons
Chopped green chilly-1
Salt
Oil
Maggi hot n sweet tomato sauce-1teaspoon
Chapati/Roti-1

Method
Beat the egg with milk, onion-green chilly and salt.
Heat a griddle, pour the egg.
Immediately place the roti on top of the omelet.
Sprinkle oil around it and let it cook for a minute.
Flip it over, and take it from the griddle after 30 seconds.
Spread the tomato sauce on the omelet, sprinkle some chopped onions, roll it and enjoy!

Spicy Egg fry


Ingredients
Hard Boiled eggs-3
Onion-1
Tomato(small)-1
Curry powder-11/2teaspoons [I've used MDH Madras curry powder]
Salt
Few curry leaves

To coarsely grind
Cumin seeds-1teaspoon
Coriander seeds-1teaspoon
Pepper corns-1teaspoon

Method
Heat oil in a pan, add the onions-curry leaves and sauté for a minute. Then add the tomatoes and cook till it becomes soft n mushy.
Add the curry powder-salt and mix it well.
Now add the hard boiled (eggs cut into half), mix it gently and cook on low heat for 3-4 minutes.
Finally add the powdered spices, gently mix it, reduce the heat to low, put off the flame after a minute or two.
Hot n spicy egg fries are ready! Enjoy it with your rice/roti/pulao of your choice.
We had it with vegetable biriyani.

Egg Korma / Muttai kuruma

Ingredients
Hard boiled eggs-3
Tomato-2
Coconut milk powder-2tablespoons
Turmeric powder-1/4teaspoon
Chilli powder-1/2teaspoon
Coriander powder-1teaspoon
Bay Leaf-1
Water
Cilantro to garnish
Oil
Salt

To Mince
Onion-1
Green chilly-1
Ginger-2"piece
Garlic-3 cloves

Coriander seeds-2teaspoons
Cumin seeds-1teaspoon
Pepper corns-1teaspoon
2"Cinnamon Sticks
Elaichi-1
Cloves-2
Fennel Seeds-1teaspoon
Red chilly-3 (adjust to your taste)

Method

1.Chop the onions,g.chilly..n keep the ginger-garlic ready.

2.Take all the dry ingredients to mince in a mixie jar and powder it.

3.Add the onion-g.chilly-ginger-garlic in the mixie and mince it.

4.Heat a tablespoon of oil and add the bay leaf once the oil is hot. Add the minced masala and cook till the raw smell of the onion is gone. Add another tablespoon of oil in between, and stir it so that the masala dose not get burnt. (will take 5-6minutes on low heat)

5.Now add the tomatoes with turmeric,chilly,coriander powders and salt. Continue cooking till the tomaotes become mushy, and the oil oozes out.

6.Add 1.5 cups of water and let it boil nicely.

7.Then add the peeled and sliced eggs. (We don't eat the yolk, so I didn't add. :) ) Cook for a few minutes.

8.Mix the coconut milk powder in 1/2cup of warm water and add it to the gravy, cook on low heat for 10minutes(or) the oil oozes out.

9.Garnish with cilantro and put off the flame. Spicy egg korma is ready to enjoy with parotta/biriyani/roti or any other rice variety!

Do adjust the quantity of pepper corns,green chilly,red chilly and cloves. We felt it little spicy, but being spicy eaters, we enjoyed this korma. :P

Quiche/Savory Tart

Quiche AKA Savory tart is an open faced savory pastry..the(veggie) filling is usually with cheese,onions and vegetables. I've had a Broccoli quiche once in a party..wanted to try that, and slowly forgot about the recipe.

When I saw these savory tarts in Julie's "erivum puliyum"..As I had all the ingredients she mentioned at hand, I prepared it and guess what??? Its big hit! Thanks Julie for the recipe! :)

Ingredients
Puff pastry sheets - 3 [I get square pastry sheets and used 3 sheets. If using Pepperidge farm pastry sheet, use accordingly!]
Spring onion- 6stalks
Onion(small)-1
Minced Garlic-2cloves
Chilli powder-1/2teaspoon
Garam masala powder-1/2teaspoon
Boiled Eggs-2
Shredded cheese -1/4cup
Pomegranate seeds- 1/4cup
Oil

Method
Thaw the pastry sheet.
Chop the onions and spring onions. Cut the eggs into small chunks.
Heat a teaspoon of oil in a skillet, add the onions and sauté them for a minute and add in the spring onions. Toss for a few minutes, add the chilli powder,salt and garam masala. Put off the flame. Add the egg chunks,mix it well and keep aside.

Roll the pastry sheet slightly and cut into small squares. Greese the muffin pan, place the pastry squares,press slightly so that they form a cup. Spoon the mixture , top it with cheese, sprinkle the pomegranate seeds.
Bake the muffin tray in 400F preheated oven for 20minutes..serve warm with tomato ketch-up or sauce.

Minced Chapathi with egg

This is a simple and tasty recipe to finish off the left-over roti's! ;)

Ingredients
Chapathi/Roti -5
Egg-2
Onion(medium size)-1
Chopped Capsicum -2tablespoons
Green chilli-1
Chilli powder-1/2teaspoon
Sakthi Curry Masala powder-11/2teaspoon
Oil
Salt

Method
Cut the chapathi(roti's)s into small pieces.
Chop the onion-green chilli.
Heat oil in a heavy bottomed kadai and fry the onion-green chilli-half of the capsicum pieces with little salt, till the onions become soft.
Add chilli powder and one egg, mix everything well.
Now add the roti pieces,give a quick stir, then add the other egg.
Cook till the egg is done and add the curry masala powder-mix well and switch off the stove after a minute or two.
Garnish with the remaining capsicum pieces and chopped onion.
Enjoy it with Onion-raitha or plain curd.

Note
Be careful while adding salt,as roti has salt too!

Egg Curry

Ingredients
Egg-3
Onion(medium size)-1
Green chilli-1
Few curry leaves and Cilantro(for garnishing)
Tomatoes(small)-2
Chilli powder-1spoon
Turmeric powder-1/4spoon
Mustard seeds-1/2spoon
Oil
Salt

To grind
Almond(Badam)-8
Ginger-1" piece
Garlic-3cloves

Method
Hard boil 2 eggs with little salt.Take-out the shell and keep them aside.
Soak the almonds in hot water for half an hour,peel the skin and grind it with ginger&garlic to a fine paste.
Chop the onions,green chillies and tomato.
Heat oil in a pan,add the mustard seeds and let them pop. Then add the chopped onions-green chilli and curry leaves. Fry till onion becomes transparent.
Now add the ground paste and cook for few minutes,add the tomatoes and cook till they become mushy.
Add a cup of water,enough salt and bring it to boil.(Adjust the consistency to your taste with more or less water). Cook on medium heat till the oil oozes out.
Make slits in the boiled eggs,add them into the gravy.
Break the remaining egg and add it directly into the gravy. Cook the gravy on low heat for 3-4 minutes and switch off the stove.
Garnish the Curry with Cilantro.
Spicy egg curry is ready to serve! Goes well with roti/rice. Personally I liked it very much with hot steaming rice than with roti's! :)
