Paruppu Podi

I always keep idli pedi / Gun powder ready..though chutneys are prepared, my better half loves these podi's. This podi is little different from the one I usually make. This one tastes good with hot rice and ghee as well as idli-dosa too. 

Ingredients 
Thoor Dal / Thuvaram paruppu - 1/4cup
Channa Dal / Kadalai paruppu - 1/4cup
Urad Dal / Ulunthu paruppu - 1/2 tablespoon
White Sesame seeds / Ellu - 1/2 tablespoon 
Pepper corn -1/2 teaspoon 
Red chilly -2
Hing/ Perungayam - 1/4teaspoon 

Method 
Dry roast the dals one by one until they turn golden in color and nice aroma comes. Do it patiently on low medium heat, taking care not to burn the dals. 


Similarly roast the sesame seeds, pepper corns-red chili and let everything cool down.
Grind them coarsely adding enough salt, hing and 1/2 teaspoon of sugar.
Store it in airtight container. Serve as a side dish with gingelly oil or ghee to idli-dosa-rice.

Cauliflower stir fry with freshly ground curry powder/ Curry podi & cauliflower podi curry

Ingredients for Curry Powder
Channa dal-1tablespoon
Urad dal-1tablespoon
Coriander seeds-1tablespoon
Hing/Asafoetida-1/8teaspoon
Red chilly- 4 (adjust to your spice level)

Method 
Dry roast all the items given above, without burning anything.
Let it cool, and grind it to a powder. This powder can be used to make lot of dry vegetable curries.
Cauliflower podi curry- Ingredients
Chopped Onion-2 tablespoons
Chopped Garlic-1teaspoon
Mustard seeds-1/2teaspoon
Urad dal-1teaspoon
Few curry leaves & Cilantro
Salt
Gingelly oil-1tablespoon
Cauliflower florets-1cup
Curry podi/ Curry powder-11/2teaspoons (adjust to your taste)

Method
Wash and microwave the cauliflower florets till 3/4th done.(say 2-3 minutes in high power..or steam them in a steamer)
Heat oil in a wide skillet, add the mustard seeds and let them splutter.
Add urad dal and fry till it turn golden, then add the curry leaves.
Now add the pre cooked cauliflower and cook for a minute.
Add the curry powder and enough salt.
Keep cooking till the masala is well coated with the cauliflower, it may take around 2-3 minutes on medium flame. 
Finally add in the cilantro and put off the stove.
Enjoy with your choice of main course.

Poondu podi/Chutney powder with Garlic

Ingredients
Channa dal/ Kadalai paruppu -1/4cup
Urad dal/Ulutham paruppu -1/4cup
Garlic/Poondu - one bulb
Red chillies- 8 (adjust to your taste)
Hing/Asafoetida -1/4teaspoon
Jaggery/Vellam- a tiny piece
Salt

Method
Dry roast all the items (except garlic) separately. Take care not to burn any..
Let it cool completely. Add the red chillies-dal into a small jar of a mixer and grind it to a coarse powder. Then add in the salt, jaggery, and hing. Grind again for couple of minutes.
 
Meanwhile, peel and chop the garlic cloves. Now add them with the dals and give it a few pulses.
 
The outcome will be a sticky mass, spread it on a plate and let it dry for 2-3 hours. If you like the chutney powder to have a grainy structure, then you can store it in an airtight container.
Since we like the podi to be on the finer side, I powdered it again.
 
Store the podi in airtight container...
 
..and enjoy it with idli-dosa-oothappam.

Idli Upma (version 2) & Idli podi

I have already posted a recipe for idli upma here. But this is little bit different than that one. With this I am giving a simple and tasty recipe for Idli podi/chutney powder as well.

Ingredients
Idli -4 (left over idli will be fine)
Onion(small)-1
Few curry leaves
Green Chilly -2 (adjust to your taste)
Mustard Seed-1/2teaspoon 
Urad dhal -11/2 teaspoon
gingelly  oil - 1tablespoon
Salt - 1/8teaspoon
Idli podi - 2 tablespoons

Method
Cut the idlies into small pieces (or crumble them..which ever is you are convenient with! :)) and keep it aside.
Chop the onion and green chilly into thin stripes.
Heat oil in a pan, make the tempering with mustard seeds, followed by urad dhal and curry leaves.
Add the onion-g.chilli along with little salt, fry till they become transparent.
Now add in the idli-powder and give it a quick mix. 

Add the idli pieces and toss it well.
Cook for a minute and put off the flame.
Let it be on the stove for few minutes and then serve hot. Be generous with oil and urad dhal which enhances the taste of this simple dish into a tasty meal. ;)

 

Idli podi / Chutney Powder
Ingredients
Channa dhal-1/4cup
Urad dhal -1/4cup
Red chilly- 10 (adjust to your spice level)
Sesame seeds -1 tablespoon
Vellam/ Jaggery/ Gudd -a small piece
Hing/Asafoetida - 1/4teaspoon
Salt
Dry roast the dhals  separately on medium heat, till a nice aroma comes.
Then roast the sesame seeds on low heat. They will start spluttering, by then remove them from the pan and keep it aside. 

Switch off the flame, and add the red chillies to the pan. They will get roasted by the heat in the pan. Take them out after a minute and add in the hing powder. 
Then remove the pan from the stove, let all the items cool down. 
Once cooled down, grind them  with enough salt to a coarse powder. Tasty and aromatic idli podi / chutney powder is ready. Mix it  with gingelly oil/coconut oil/ghee or even with any cooking oil. Tastes great with idli and dosa.
