Low fat Whole-wheat Banana-berry&Walnut Cake

This is the low fat and healthy version of the regular Banana-Walnut cake. I have used only egg whites, whole wheat flour, less sugar. Try it and you will definitely like it! :)
Ingredients
Whole wheat flour/Aata -11/4cup
Baking soda-1/2teaspoon
Cinnamon powder-1/2teaspoon
Vanilla extract-1/2teaspoon
Banana puree-1cup
Chopped walnut-1/2cup
Dried cranberries-2 tablespoons
Sugar-6tablespoons
Salt-1/4teaspoon
Softened Butter-4tablespoons(can replace it with canola oil)
Fat free milk-1/4cup
Egg whites from 2 large eggs
Note: Separate the eggs immediately after taking them from the fridge and then bring it to room temperature. Its easy that way.

Method
Pre heat the oven to 350F.
Sift together the whole wheat flour-baking soda-salt-cinnamon powder and keep it aside.
Cream the sugar and butter. Add the egg whites with vanilla extract, mix it.
Mash the bananas with the fork and keep it ready.
Add the dry ingredients with wet ingredients. Fold it gently.
Now add the chopped walnuts-banana puree and fold it.
Finally add in the dried cranberries and fat free milk, mix everything.
Pour the cake mix in a greased loaf pan and bake it for about 50 minutes. 
Open the oven, cover the pan loosely with an aluminum foil and continue baking for 10-15 more minutes(or) the till the cake is done.
Remove the cake pan and let it cool for half an hour. Run a knife on the edges of the pan carefully and remove the cake, let it cool on a wire rack for 2 hours. 
Slice the cake and enjoy! It tastes better the next day!

Orange Marmalade Coffee Cake

Ingredients 
All purpose flour -11/4cups
Sugar-1/2 cup +1/4cup(for the middle layer)
Orange marmalade-1/4 cup+2tablespoons(at room temperature)
Orange Juice -taken from half of an orange.
Baking powder-3/4teaspoon
Baking soda-1/4teaspoon
Salt-1/4teaspoon
Eggs-2 (at room temperature)
Vanilla essence-1teaspoon 
Butter-6tablespoons(at room temperature)
Curd-1/4cup(at room temperature)
Cinnamon powder-1/2teaspoon 
Orange zest- 11/2teaspoons
For the Glaze
Icing Sugar - 3tablespoons
Orange Marmalade -2tablespoons
Orange juice - taken from half of an orange.

Method
Mix the flour-baking powder-baking soda, sieve it twice and keep it aside.
Grate the zest from the orange, cut it into 2 parts, squeeze one part and keep it aside. 
Start beating the softened butter in a mixing bowl. After a minute add the sugar and beat the mixture till it becomes creamy. 
Now add in the eggs and vanilla. Mix everything well. 
Add in the orange marmalade and curd, mix it.
Then add in the orange zest along with the juice (taken from one part of the orange)
After beating everything together, start adding the flour and fold it. 
Meanwhile take the 1/4 cup sugar along with cinnamon powder, mix it well and keep it aside. 

Pour half of the cake mixture into a greased pan, sprinkle the sugar-cinnamon powder mix evenly on the cake. Then pour the remaining mixture in the pan. 
Tap the pan and level the batter, bake it for 35 to 40 minutes in the 350F preheated oven.
Meanwhile prepare the glaze. Take 2 tablespoons of marmalade and microwave it for about 10-20 seconds. Take it out, add the orange juice from the remaining part of the orange, and add 3 tablespoons of icing sugar. Mix it well and keep it ready. 

Check the cake after 35-40 minutes (insert a knife into the cake, knife should come out clean) and take it out. Let it cool for 5 minutes, then loosen the edges, invert it onto a plate, pour some of the glaze.  
Turn the cake and poke small holes with  a fork or wooden skewer. Pour the remaining glaze evenly on the warm cake and let it sit for one or 2 hours.
Delicious orange marmalade coffee cake is ready to serve. Cut it into slices and serve.

Coconut Cake

Ingredients
All purpose flour-11/4 cups
Sugar-3/4 cup
Baking powder-1/2teaspoon
Baking Soda-1/2teaspoon
Butter-4 tablespoons
Egg(medium size)- 2
Milk-1/4cup
Milk powder-1/4cup (Optional)
Sweetened Coconut Flakes-1cup
Chopped nuts-1/4cup
Almond essence-few drops

Method
Preheat the oven to 300F. Spread the coconut flakes in a baking dish and toast it for 10-12 minutes(till it becomes golden in color). Toast the nuts for 6-7 minutes. let them cool. Crush the nuts coarsely and keep aside.

Sift the flour with baking powder and baking soda.

Cream the butter with sugar. Add the milk and milk powder,beat it for 2 minutes. Add the almond extract, and eggs. Beat well. Add the flour and mix gently with the whisk.
Meanwhile preheat the oven to 350F.

Now add the toasted coconut and nuts, mix everything together and pour the batter into a greased baking pan.


Bake it for 45-50 minutes or a tooth pick inserted in the cake comes out clean.

Crunchy nutty coconutty cake is ready to enjoy! Serve it with a cup of tea! :)

Banana-Walnut Cake

My Hubby never eats cake,that's the reason I stopped baking cakes at home. To my surprise one day he said he used to go to Starbucks near his office and became a great fan of Chai-latte & Banana-Walnut cake. grrrrrrrrrrr! The very next day I baked this cake and thereafter it became our favourite evening snack. :)

Ingredients
Bananas-2
Walnut(broken into small pieces)-1/2cup
All purpose flour-11/4cups
Sugar-1/2cup
Baking Powder-1/2teaspoon
Baking Soda-1/2teaspoon
Cinnamon powder-1/4teaspoon
Pure Vanilla extract-1/4teaspoon

In Room Temperature

Butter-1/4cup
Milk-1/4cup
Eggs-2

Method
Sieve the flour with Baking powder-baking soda-cinnamon powder twice and keep aside.
Separate the egg whites and yolks.
Cream the butter and sugar. Add egg yolks-vanilla and beat well.
Then add the flour and milk alternatively, mix well.
Mash the bananas, fold it with the flour mixture.
Beat the egg whites and fold it with the cake mixture.
Finally add in the walnut pieces,mix well.
Pour it in a buttered baking dish and bake it for 45 to 50 minutes in a 350F preheated oven.

Cool the cake for 2 hours..slice it and enjoy with tea!
Amazingly soft cake with nice crust.Be ware,won't be able to stop eating! :P

Carrot Cupcake

Ingredients
Carrot-3
All purpose Flour-1cup
Sugar-1/2cup
Egg(@room temperature)-2
Canola Oil-1/4cup
Baking powder-1teaspoon
Baking soda-1/4teaspoon
Cardamom powder-1/4teaspoon

Method

Grate the carrots.

Sieve the flour with baking powder & baking soda.

Beat the eggs with Cardamom powder..

Add the sugar and mix well till the sugar dissolves..

Add 1/4 cup of canola oil..

Mix everything together.

Mix the grated carrots and all purpose flour.

Add it with the egg+sugar mixture

Mix gently with a whisk..

Line the muffin pan and pour the cake mixture.

Preheat the oven to 350F and bake the cakes for 35 minutes(or until a toothpick inserted come clean)

Soft and tasty carrot cupcakes are ready to serve.
Note
Usually Cinnamon powder/Nutmeg powder will be added in the carrot cake..but I don't like these flavours in a desert..so added cardamom powder.:)

Orange cupcakes


Ingredients
Self raising flour - 2 cups
Sugar - 1 cup
Baking soda - 1/2 spoon
Large Egg - 3
Unsalted Butter - 115grams
Yellow & red colour - few drops

Method
Sieve the baking soda and flour 2 times.

Grate the zest from the oranges and squeeze out the juice.

Cream the butter and sugar till the mixture becomes light and fluffy.

Separate the egg yolks and whites.

Add in the egg yolks and 5 drops of red, 7 drops of yellow food colour with butter,sugar mixture and blend well.

Add the Orange juice and mix it well.

Now add in the flour and fold it slowly. Beat the egg whites and fold them with the batter.

Finally add the orange zest and give it a quick mix.

Pour the batter in a lined muffin pan..bake it in a 350F pre heated oven for 35 minutes.

Let the cakes cool down completely and decorate them with your choice of frosting or icing.

Yummy cup cakes are ready to eat.




Note
Butter and egg should be in room temperature.

Fruit Cake


Ingredients
All Purpose flour/Maida - 1 1/2 Cup
Unsalted Butter - 115grams
Large Eggs - 3
Sugar - 1 Cup
Dry Fruits & Nuts - 1 Cup
Vanilla essence - 2 Spoons
Baking Powder - 1/2 Spoon
Baking Soda - 1/2 Spoon
Fresh Orange -1

Method

Sieve the flour with Baking soda & Baking powder three times.

Separate the egg whites and yolks.

Cream the butter and sugar till the mixture is light and fluffy.

Add in the egg yolks and vanilla essence and mix well.

Add the flour little by little and mix it slowly.

Beat the egg whites well and add it with the cake batter.

Grate the Zest of the orange and add it..take the orange juice and mix it.

Now mix the dry fruits and nuts in a spoon full of flour and add them into the cake mixture.


Pour the cake batter in a buttered baking pan and decorate it with the dry fruits.


Bake it in a 350F preheated oven for 35 minutes or till a knife inserted comes out clean.

Cool it for 2 hours and remove the cake form the baking pan.

Fruit cake is ready to serve.

Note
Butter and eggs should be in room temperature.
