Methu Bonda

Ingredients
Gram Flour -1/2cup
Rice Flour-1/2tablespoon
Baking Soda-1/4teaspoon
Butter-1tablespoon (softened/room temperature)
Chopped onion-1/4 cup
Chopped green chilly-2
Chopped ginger-1teaspoon
Salt
Oil to deep fry

Method
Take butter and baking soda in a bowl and beat it until its creamy and frothy. 
Add all other ingredients (except oil), mix it well. Add a tablespoon( or less) water, mix the batter. 
The batter should be thick. (thicker than the batter you make for idly)
Heat oil on medium heat. 
Drop small amount of batter in the hot oil, fry the bonda until it turns golden. Drain the excess oil in a paper towel. 
Serve hot with a hot cup of tea or coffee.

Mampazha puliseri/ Ripe Mango & Yogurt curry

Ingredients
Ripe Mango -1
Chilly powder-1/2teaspoon
Cumin powder-1/4teaspoon
Turmeric powder-1/4teaspoon
Yogurt-1/2cup
Coconut paste - 2tablespoons
Sugar-2teaspoons
To temper
Coconut oil - 2teaspoons
Mustard seeds-1/2teaspoon
Fenugreek seeds- 7
Red chilly-1
Few curry leaves
Salt

Method
Wash and peel the mango, cut it into cubes.
Add the mango in a pan along with chilly, turmeric, cumin powders and salt. Let it cook until the mango gets cooked.
Add the coconut paste and sugar. Let it boil nicely until the raw smell of the coconut goes away on low heat.
Remove the pan from the stove, add the whipped yogurt and mix well. 
Heat coconut oil in a small pan, add the mustard seeds and let them pop-up. Then add the fenugreek seeds and broken red chilly, curry leaves and pour it over the curry.
Delicious Mampazha puliseri is ready! Enjoy it with hot white rice or dosa or even chapati.

Mushroom Stir-fry/ Kalaan Poriyal

This is a very quick & simple and delicious side dish with mushrooms. It goes well with rice dishes, but it will be great with roti's too! 
Ingredients
Mushrooms-200grams
Onion, chopped- 2tablespoons
Green chilly-1
Mustard seeds-1/2teaspoon
Turmeric powder-1/4teaspoon
Chilli powder-1/2teaspoon
Curry masala powder-3/4teaspoon
Cilantro- to garnish
Salt
Oil 

Method
Clean and slice the mushrooms.
Heat oil in a pan, add the mustard seeds and let them pop. Then add the chopped onion and green chilly, sauté till the onions become transparent.
Add the mushrooms and give a quick toss..
Add the turmeric, chilly and curry masala powders with enough salt.
Sprinkle little water, close the pan and cook on medium heat.
Open the pan after 5-6 minutes, and sauté until the curry turns out almost dry.
Add the chopped cilantro and enjoy!
