Aaloo Methi / Potatoes with Fenugreek Leaves

Ingredients
Potato-3
Cleaned and washed methi leaves - 1 fist full
Onion-1
Tomato-1
Chilli powder-3/4 teaspoon
Coriander powder-3/4teaspoon
Turmeric powder-1/8teaspoon
Cumin powder - 1/2teaspoon
Salt
Sugar
Oil
Cumin seeds- 1/2teapsoon
Method
Peel  the potatoes and cube them.
Chop the onion& tomato.
Heat oil in a pan, make the tempering with cumin seeds.
Once they splutter, add in the onions and fry till they turn translucent.
Add the tomatoes and continue cooking.
After the tomatoes become soft, add the chilli-coriander-turmeric-cumin powders along with salt. Add few tablespoon of water now and then to avoid the spices getting burnt.
Cook till the oil oozes out, and add the cubed potatoes.
Mix everything well, and add 1/4cup of water, cover the pan and cook till the potatoes are done.
Now add the chopped methi leaves along with 1/4teaspoon of sugar.
Keep the pan open and cook till the curry becomes dry.
Delicious aaloo-methi is ready. Enjoy it with roti or rice. I had it with Jeera-rice.
